
Liege’s Waffle originated from the city of Liège in Belgium, where they were a pleasure loved for centuries. Made with a dough similar to a brioche, they are incredibly soft and buttery and pearl sugar melts slightly, creating a decadent creaking and pockets of rich and caramelized sweetness. Although Liege’s Waffle are perfect alone, feel free to serve them with any condiment you like.

- 3rd cups (406 grams) Flour for all uses
- 3 spoons (36 grams) granulated sugar
- 1 (0.25 Once) Package (7 grams) instant yeast*
- ½ teaspoon (1.5 grams) Kosher salt
- ¾ cup (170 grams) not salty butter, slightly dissolved and cooled
- ¾ cup (180 grams) hot milk (120 ° f/49 ° C at 130 ° f/54 ° C)
- 1 Ogg large (50 grams), ambient temperature
- 1 large egg yolk (19 grams), ambient temperature
- 1½ spoons (6 grams) Vanilla extract
- 1 cup (156 grams) Belgian pearl sugar

In the bowl of a support mixer, beat together 2ulation cups (281 grams) of flour, granulated sugar, yeast and salt until they are combined. Add melted butter, hot milk, egg, egg yolk and vanilla. Using the shovel attack, beat low speed until it is combined. Add the remaining flour from 1 cup (125 grams) and beat until a ruffled mixture is formed, from 3 to 4 minutes. (The dough will be very soft but should be smooth and not excessively sticky.) Cover and leave to rest in a hot and pitless place (75 ° f/24 ° C) for 30 minutes.

Turn off the dough on a clean surface and gently knead pearl sugar. Divide the dough into 6 portions (about 166 grams each).

Heat a Belgian Waffle according to the manufacturer’s instructions and spray with kitchen spray. Lightly flatten 1 portion of pasta and place the prepared iron. Cook according to the manufacturer’s instructions until golden brown. Repeat with the remaining dough, spraying iron with kitchen spray after any other waffle. Serve hot.

Do not scrape the rest time at the end of passage 1. This allows gluten in the dough to relax so that the dough spread evenly in the Waffle iron. Cotti waffle can be frozen in a plastic bag that is located for a maximum of 2 months. Heats in a 150 ° C oven of 300 ° F.
