What is peanuts?

Ají de Maní is an indigenous spicy sauce in the Popayan region in Colombia. It is a must to serve with Empanadas de Pipian and Tamales de Pipian. Personally I love this delicious sauce with fresh vegetables or grilled chicken.

My American husband eats this sauce as a dive with the ritz crackers and says it is really good. However, you use it, it’s a wonderful spicy sauce recipe.

Ingredients you need

Vegetables: Shamerals, garlic and pepper habanero

Oil: You can use vegetables, rapes or corn oil

Peanuts: I recommend using roasted peanuts to prepare this sauce.

Herbs: Fresh coriander or parsley

Condiment: Sazón with color or azafran, cumin, salt and pepper

How to make peanut pepper

  • Heat the oil in a pan, add the shallots and coriander. Cook for about 2 minutes. Transfer to a blender and add the rest of the ingredients.
  • Blend until smooth. Transfer the sauce to the pan and cook at low level for 12-15 minutes. Let it cool and serve.

How to store

Keep in a sealed container up to 3 days in the refrigerator. I don’t recommend freezing this peanut sauce.

  • 2 shallot finely chopped
  • 2 spoons vegetable oil
  • ¾ cup Roasted peanuts
  • ¼ cup fresh coriander
  • 1 GREAT SPICCIOLO ALLO GAGLE
  • ¼ teaspoon Sazon Goya with Azafran Achito or color
  • ½ teaspoon cumin on the ground
  • Salt and pepper
  • 1 teaspoon Habañero pepper chopped
  • 2 cups water

Instructions
