This recipe uses fresh ingredients all sliced, making it easy to prep and clean up. The ease doesn’t stop there, though: This all cooks in one pan and only takes about 30 minutes to cook. Say hello to your new favorite weeknight meal!
Notes on ingredients


- Boneless, skinless chicken breasts: For this recipe we recommend using chicken breasts. Thighs might work too, but you’ll need to cook them longer. Whatever cut you use, make sure you use skinless chicken.
- Peppers: Any color of peppers will work for this recipe! Feel free to use one or more colors, depending on what your family likes or what’s on sale. Cut them into thin strips that will be easy to eat.
- Red onion: Cut the onion in half and then into thin slices. Red onion works best for flavor and color, but you can also use a white or yellow one.
- Lime juice: Fresh limes are best and you will need about two for this recipe. Bottled lime juice will also work.
- Flour tortillas: Go ahead and use your family’s favorite flour tortillas, but we suggest warming them first.
- Seasonings: We love putting a dollop of sour cream on top and even a few extra lime wedges to squeeze on top for an extra zing!
Mixture of spices
While you can often find a pre-made fajita spice mix at grocery stores, we recommend making your own! Each brand differs in the ratios and quality of spices in fajita spice blends, so using our spice blend will ensure quality flavor. It only takes a few extra minutes and really enhances the flavor of your fajitas.
Chilli Flakes: Another benefit to making your own spice mix is that you can control the spice level: If your family isn’t as tolerant of spices, you can reduce the amount of chili flakes you add. Or, if you’re really looking for heat, feel free to add more!


How to heat tortillas
The typical choice is to use fajita tortillaswhich are 6-inch flour tortillas, as they are the perfect size to hold all those delicious fillings. They are also generally reheated for serving.
To reheat tortillas on the stovetop: Heat a dry skillet over medium-high heat and heat each tortilla for about 30 seconds per side until soft and slightly charred.
To heat tortillas in the microwave: Stack tortillas between moist paper towels and microwave in 20-second increments until heated through.
To reheat tortillas in the oven: Wrap a stack of tortillas in aluminum foil and heat in a 350°F oven for 10 to 15 minutes.
Instructions for storage and heating
Refrigerate leftovers in an airtight container for up to five days.
Freeze remaining portions in an airtight container or resealable plastic freezer bag. Thaw in the refrigerator overnight.
Heat in a pan on stovetop over medium-low heat, stirring occasionally, until thoroughly heated.
Heat in the microwave placing leftovers in a microwave-safe dish, covering, and reheating in 30-second increments, stirring occasionally, until thoroughly heated.
