What are open bananas?

They are also known as Plátanos en Tentación in some Colombian regions. This dish is very popular in Latin America and has different names depending on the country and each country has its own way to prepare this dish. Some of the names of this dish in Latin America are Plátano Pícaro, Dulce de Plátano and Plátano en almibar.

This is the Colombian recipe of Calados Colombian of my grandmother. This dish is substantially planted mature cooked in a sweet, tasty and dense syrup. Some chefs add vanilla extract, cloves, cinnamon and salt to the plate. They are many variants in each country and each family has its own recipe.

Platani: This recipe will be as good only like your plane trees. So I highly recommend buying very mature plane trees or allowing them to fully mature at home before using them to make this recipe. To mature the plane trees more quickly at home, put them in a paper bag and left at room temperature until it is ripe.

Sugar: Traditionally, this recipe uses Palea (non -refined cane sugar), but if you don’t find it, use light brown sugar.

Cinnamon: I recommend using cinnamon sticks for this recipe, they add a delicious flavor to the syrup. If you don’t have sticks, the cinnamon on the ground will work.

Butter: I like to use good quality butter for this recipe.

Cloves: Some people add cloves to the syrup, but I don’t like them. If you like carnation nails, add 6 whole carnation to the syrup.

Ingredients

  • 2 Great very mature plane trees peeled and cut into 4 pieces each
  • ½ cup light brown sugar or grated panel
  • 1 cup water
  • 2 Cinnamon stick
  • ½ table spoon butter

Instructions

  • In a small pot, place all the ingredients, cover and cook over medium heat for 15-20 minutes.

  • Transfer to a serving dish and serve with white cheese.
