LIGHT PANCAKES : Recipe by Rice Powder
Quick and easy recipe light pancakes gluten and lactose free.
A recipe ready in just 3 minutes that can be transformed from sweet to savory by simply removing or adding honey or your favorite sweet syrup to the surface.
Low in fats and bad sugars but rich in proteins, these light pancakes are perfect as a post-workout snack.
PREPARATION TIME: 1 MINUTE
COOKING TIME: 2 MINUTES
TOTAL PREPARATION TIME: 3 MINUTES
INGREDIENTS for LIGHT PANCAKES (dose for 8 small LIGHT PANCAKES):
1 egg
40 g of apple juice (or any liquid you prefer such as water, milk, etc.)
10 g of rice oil (or whatever you prefer) + to taste for oiling the pan
40 g of chickpea flour
20 g of rice flour
1 pinch of bicarbonate
honey or favorite syrup to taste
COME AND PREPARE THE LIGHT PANCAKES:
- 1. In a bowl, add the egg, apple juice, rice oil and mix with the help of a whisk or fork.
- 2. Now add the chickpea flour, the rice flour, the pinch of bicarbonate of soda and mix everything together with the help of a whisk.
- 3. Once you have obtained a smooth, homogeneous and lump-free mixture, oil a non-stick pan and heat it.
- 4. With the help of a spoon, pour the mixture into the pan, making the classic round shape of the pancakes and cook them for about 1 minute on each side.
- 5. Serve the light pancakes with plenty of honey, if you want them sweet, or accompanied by eggs and ham if you prefer them in the savory version.
