Birria ‘Las Margaritas’
Birria, Jalisco’s best-known dish, is a spicy, brothy stew made from goat or beef, marinated in chilies and aromatic spices, wrapped in maguey leaf and then simmered in a sealed pot with corn masa. It is then served bathed in its own broth, eaten with a spoon or rolled into tacos garnished with cilantro, onions and avocado.
Las Margaritas, located just outside La Merced’s huge main market building, is a modest stand made up of a couple of tables enclosing the cooking area. Don’t be put off by the apparent simplicity because this family, originally from Guadalajara, prepares some of the richest beef birria in the city. We usually stop for a couple of tacos with all the trimmings accompanied by a small bowl of poetically rich consomé.
