Passion fruit is a fruit with a very humble appearance due to the flavor and power of the aroma it packs. These fruits are oval and sized to fit in your hand. They are usually purple, sometimes yellow. There is a characteristic wrinkling of the fruits as they ripen.
When buying fruit, choose large fruits. The little ones won’t have much pulp. Check the heaviness because heavier means juicy. If ripe the skins will be slightly wrinkled and the fruit should smell really good. If you keep the fruit even longer, the skins will become very wrinkled, but that’s okay. They are still usable, just a little less juicy.
Passion fruit is cut in half to expose the juicy pulp inside. There will be an explosion of intense tropical scent. A spoon is used to scoop out the juicy pulp, seeds and all, clean the pith and white rind.
Note that the passion fruit in the photo above is super wrinkled. I left them around the house for a long time and they were perfectly fine!
Look at the colors! This passion fruit syrup is made with just three ingredients: passion fruit pulp, sugar and water. The ratio between the three is simple, just 1:1:1 in volume. So it’s easy to adjust the recipe to the amount of passion fruit you have on hand. Given the extremely good reception of this exotic syrup in our home, it is probably a good idea to make more, more!
Cook this mixture over low heat to preserve the fragrance of the passion fruit as much as possible. At this point your home smells like a tropical paradise!
The passion fruit syrup is allowed to cool and is ready. So easy to make!! Prepare a sterilized jar and pour in the syrup. Your passion fruit syrup will stay for good while it’s in the fridge this way. I doubt how long it will keep as it is so deliciously usable that I’m sure, like in our house, this luscious syrup will be gone in a couple of days.

Use this syrup to make omgosh the most refreshing passion fruit drink that it is out of this world. My little girl is absolutely addicted to this! (Makes 2 1/2 cups, 600 ml) Prep Time: 3 minutes Cook Time: 10 minutes
Ingredients:
- 3/4 cup passion fruit paste, 145 g or 6 whole passion fruit
- 3/4 cup water, 175 g
- 3/4 cup sugar, 150 g
Rinse and dry passion fruit. Take a passion fruit and slice in half. Collect the pulp, including the seeds, in a bowl. Repeat for all fruits.
Put pulp, water and sugar in a pot. Heat over medium heat. Once a boil is reached, immediately Reduce heat to a simmer. Keep an eye on the pot as the syrup will boil if the heat is not turned down immediately.
Keep on low heat, cook for 10 minutes. Remove from the heat and leave to cool.
When completely cooled, pour the syrup, seeds and all, into a lid jar that has been sterilized. The syrup will keep in the refrigerator for up to a month as long as you use clean dry utensils to scoop the syrup. Enjoy the passion!
