Whole fish meal under 30 minutes with a secret seasoning

If you are too busy to prepare dinner in the evening (after work), here is a dish you could try. If you feel like whole fish, you can use fish fillet. Secret seasoning is the basis of hot pot (spicy seasoning), which adds a bold flavor to this dish. Fish and tofu for me are one of the best protein combinations in Chinese food. Of course, if you’re not a fan of tofu, you can just skip it. Enjoy!

Written recipe for Whole Fish and Tofu

Ingredients:
1 pomfret (tilapia or sea bass)
1 package soft tofu (1 pound), cut into cubes
1 piece ginger, chopped/sliced
8 cloves garlic, chopped/sliced
1 tablespoon broad bean paste
1 Piece Spicy Hot Pot Seasoning
Sichuan peppercorns
salt
white pepper powder
sugar
chicken broth (optional)
light soy sauce
Shaoxing cooking wine (or beer)
oil
2 1/2 cups cold water

To marinate the fish:
Make a few cuts on both sides of the fish. Add salt, white pepper powder, green onion slices, ginger slices, cooking wine and rub on the fish. Set it aside for 10-15 minutes.

1. Heat the pan over medium heat, brown half the chopped garlic, ginger and the white part of the green onions. Add the fava bean paste and hot pot seasoning and mix.
2. Add the water, sugar, chicken broth and light sauce and bring to a boil.
3. Place the fish in the pan and baste it. Cover the pan and cook for about 12 minutes.
4. Add the tofu and cook for about 2 to 3 minutes.
5. Garnish with green onions.
6. Place the fish on a plate and garnish with the remaining garlic, green onions and cilantro.
7. Pour the broth over the fish. Serve!
