How to fry cabbage and eggs
1. Prepare the eggs. Put the eggs in a bowl and add with Mirin, tamari soy sauce and sake. Bang well.
2. Cook the eggs. Heat 1 tablespoon of olive oil in a large pan. Pour the mix of eggs and beat gently to prepare the scrambled eggs. Transfer the egg to a plate and set aside.




3. Cook the vegetables. In the empty pan, he warm 1 tablespoon of olive oil again. Cook the shallots and mushrooms until they are slightly tender.
4. Season. Add the cabbage and the oyster sauce. Mix over high heat for a minute until the cabbage is slightly softer but still crunchy.
5. Add the eggs. Mix the cooked egg and season the sesame oil.




Optional: top with toasted white sesame.

Tip
Don’t cook the eggs too much. The eggs continue to cook after they are removed from the heat and you will put them back in the pan in the end. To maintain the consistency beautiful and soft, I highly recommend to transfer them to a plate when they are slightly little cooked by scrambled eggs.
