Chinese Noodle Soup recipe

Make this recipe of simple and quick Chinese paste soup with pantry ingredients, water and some items from the refrigerator.

Take an egg, a tomato and a little pre-lavage spinach. From the pantry, you just need dry noodles and some seasonings and you will have a quick dinner in the middle of the week, a quick lunch while you work home or a tasty hot breakfast for your children before they jump on the school bus.

This is precisely this: no meat to take off, not even a lot of cuisine! All you need to do is boil the dry noodles/vegetables and fry an egg. This recipe requires a few or no skills in the kitchen.

Creation of flavor

You may ask where the flavor of this noodle soup comes from. The condiments: soy sauce, sesame oil, black vinegar, white pepper and salt create a surprisingly tasty base.

The tomatoes add freshness and umami (see our post on how to create umami with vegetable -based ingredients). If you keep the seasonal tomatoes in the freezer, you can enjoy the tasty tomatoes in your kitchen all year round! (We leave the tomatoes from our garden every summer.)

An optional ingredient that adds even more flavor here are the flakes of dried prawns, or XIāpí (虾皮). They add a little salty bite and salty complexity. Leaving them out keeps this vegetarian recipe.

This recipe lasts about 15 minutes from start to finish. If you are looking for an easy and hot meal with a minimum kitchen, this is for you!

Recipe instructions

Put the chopped tomato, salt, white pepper powder, light soy sauce, sesame oil, black vinegar, dried prawn flakes (if they use) and shallot (or coriander ) in the bowl of pasta.

Preheat a pan or a wok until it starts smoking and spreads the oil to cover. Fry the egg to your liking, prepare it and set aside.

Boil the water in an average pot (or your wok) and add the noodles.

When the noodles have almost finished cooking, transfer 1½ cups of pasta cooking water on the bowl of pasta.

Add the green leafy vegetables to the pot/wok with the noodles. Once the noodles and vegetables are cooked, add them to the bowl.

Top with fried egg and have fun.
