Matcha Mochi’s Brownies are my pleasure for Potlucks and parties. They are perfectly sweet, unique and easily shared! All you need is to mix the ingredients in a bowl and cook in an 8 x 8 square pan.

What are Matcha Mochi’s Brownies?

These Matcha Mochi’s Brownies have a swollen and rubbery consistency just like the Japanese Mochi, thanks to the glutinous rice used in the recipe. A generous amount of matcha powder adds the grassy taste with a touch of bitterness.

They can be easily divided into small squares just like Brownies, perfect for hosting and Potlucks. It is also made with fat coconut milk, which makes this recipe naturally gluten -free and dairy products.

What is glutinous rice flour?

Glutinous rice flour is made with glutinous rice (also known as sticky rice or sweet rice) which is adhesive with a higher starch content. It is often used to make mochi.

It cannot be replaced with rice flour which is made with normal rice. For this specific recipe, I like to use Mocchiko Blue Star.

How to prepare Matcha Mochi’s Brownies

1. Prep. Preheated the oven at 350 ° f/ 176 ° C. He slightly assigns and fattens an 8 x 8 pan.

2. Add wet ingredients and sugar. In a large bowl, put the eggs, coconut milk, almond milk, sugar and vanilla. Mix well.

3. Add Match. Collect 4 tablespoons of mix in a small cup. Add the match and mix well until lumps remained. Add the Match mix in the large bowl and beat well.

4. Add dry ingredients. Add the Mochiko, the baking powder and the salt in the bowl. Mix until it is just combined.

5. Add oil. Mix the melted coconut oil.

6. Cook. Pour the mix into the pan. Cook for 1 hour or until it is set. Leave to cool.

7. Serve. Dust with match dust at the service (optional).

Suggestions

  • Once the Mochiko is added, mix until it is combined. The mixed batter created will create a densest consistency.
  • The addition of match dust to a large amount of liquid will cause the grouping and make it impossible to merge into the batter. Make sure to carefully follow passage 3.

Faq

Which match dust should I use?

It does not need to be the highest level match, I use the culinary grade match for this recipe! If you use a ceremonial degree, you will get a brighter green color with less bitterness.

My coconut milk is solid. What should I do?

Depending on the storage temperature, full fat coconut milk could separate and solidify due to the high fat content. To make it smooth, transfer the coconut milk to a secure microwave bowl and warmed for about 30 seconds or heated on a double boiler to dissolve the tufts.

How should I keep the Matcha Mochi Brownies?

You can keep the Mochi brownies at room temperature for 2-3 days, firmly covered. They can also be frozen for a maximum of 2 months. Microwave or steam slightly to defrost. You could see a trace of oil on the surface after the defrosting, but the consistency will be the same as when it is fresh.
