Instant Pot Pulled Chicken Recipe

Are you looking for a quick and cheap weeknight dinner? This instant can Pulled chicken recipe is what you might be looking for! For this recipe I only used 2 boneless, skinless chicken breasts and was very surprised at how much chicken was left after I shredded it! On the Saute setting of the Instant Pot add the red onion, chicken breasts, then add about 1 1/4 cups of liquid (BBQ sauce and chicken stock mixture) and then set the setting to pressure cook! It’s that easy!

What to prepare with Pulled Chicken?

There are many ways to serve pulled chicken which is why this is such a versatile recipe. You could make quesadillas, tacos, or even use shredded chicken to top a salad! And if you really want to get fancy, make my recipe for edible taco bowls. Whichever way you choose to use, the chicken will be the star of the show!

The quesadillas are made with pita bread, pulled chicken, cojita cheese (if you can find it), cheddar cheese, diced chili, diced tomatoes, green onion. To serve quesadillas in a fun way, use a large baking pan lined with baking paper and fill it with your entire dinner! Give everyone a fork and go! LOL. That’s if you like the person!

  • 1 red onion diced
  • 3 cloves of garlic
  • Barbecue sauce
  • Chicken broth
  • Chilli powder
  • Chili in adobo (optional)

Instant Pot Shredded Chicken Recipe

Easy and delicious! Shredded chicken with a Mexican flavor! Top a salad, make quesadillas or tacos! The chicken is the star of the show

  • 2-4 Chicken breasts, boneless and skinless
  • 1 Red onion, thinly sliced
  • 3 Garlic cloves, whole
  • 1 cup Chicken broth
  • 1/2 cup Barbecue sauce
  • 1 table spoon. Chilli powder
  • 1 teaspoon. Garlic powder
  • Salt and pepper
  • 1-2 teaspoon. mixture of corn starch and water to thicken
  • 1/2 table spoon. Chili pepper in adobo sauce optional for a football
  • Season the chicken breasts with chili powder, garlic powder, salt and pepper.Blend the chicken broth and barbecue sauce.Turn on the SAUTE setting on the Instant Pot and add the red onion. Sauté for 3 minutes.Add the chicken breasts and garlic. Lightly brown both sides of the chicken. Turn off the Instant Pot.Add the Stock BBQ mixture to the Instant Pot. Seal the Instant Pot and then pressure cook on high heat for 7 minutes. Once the time has passed, do a natural release for 10 minutes. Release the vent.Remove the chicken breasts to rest. Turn Instant Pot to SAUTE one more time. Once it boils, mix a little water with the cornstarch. Add this mix to the Instant Pot and allow the mixture to thicken slightly.Taste your sauce. Adjust if necessary. I added a little more barbecue sauce and a squeeze of lime to enhance the flavor. Once slightly thickened, turn off the Instant Pot.Shred the chicken using two forks. Add the chicken to the Instant Pot and stir.You’re ready to get creative!
