Instructions for storage and heating
As mentioned, rice is best served the day it is prepared, but leftovers can be refrigerated for up to 3 days and frozen for up to 1 month. Reheated rice will have a slightly compromised texture, but it is fine to eat.
Freeze sticky rice, divide the rice into portions and wrap it in cling film. Freeze in a freezer bag, removing as much air as possible.
To reheat refrigerated or frozen sticky rice, cover the rice with a damp paper towel and place in the microwave until hot. Halfway through cooking, remove it and break it into smaller pieces and mix everything together to obtain more uniform heating.
Alternatively, cover with paper towels or a dry tea towel and steam in a steamer until the rice is hot. After a few minutes of steaming, break the rice into smaller pieces to obtain more uniform heating. The rice will not regain its softness unless it is thoroughly heated!
Allow to cool to room temperature or slightly warm before serving.
The salted coconut sauce will last at least 1 week in the fridge without any problems. Simply reheat it in the microwave or on the stove.
To store leftover cut mangoes, cover it tightly and store in the refrigerator for up to 3 days. It may develop some browning, which isn’t pretty, but it’s good to eat.
