  • 1 tablespoon of olive oil
  • 2 large shallots, thin cut
  • 2 cloves of garlic, chopped
  • 1 tablespoon of fresh, grated ginger
  • 3 tablespoons of lemongrass pasta
  • 1 lime, zesterd and squeezing
  • 2 tablespoons of Thai green curry paste
  • 1 (14 ounces) Can cream coconut
  • 1½ tablespoons of fish sauce
  • 1½ teaspoons of coconut sugar or brown sugar
  • 1½ pounds of mussels, rubbed and weak
  • ¼ cup of fresh basil or Thai basil, chopped (more to garnish)
  • Lime wedges, to serve

  • Cook the noodles for a minute less than the indications of the package. Drain and rinse with cold water. Set aside.

  • In a large pan or a matrix, heat the oil over medium-high heat. Add shallots, garlic and ginger. Cook, mixing for 1-2 minutes. Add the lemongrass pasta, lime zest and curry paste. Cook for another 2 minutes or until it is fragrant. Mix the lime juice, coconut cream, fish sauce and sugar. Bring to a boil. Add the mussels, cover the pan and cook for 4-5 minutes or until the mussels have opened. Discard the mussels that do not open. Add the noodles and chopped basil leaves, mix gently and cook for another minute or until everything is heated.

  • Serve with additional basil leaves and lime wedges.
