Arroz de Pajarito is a traditional outline forms the Caribbean coast of Colombia. This rice with mature plantain is a wonderful recipe to be served with any protein.

Arroz de Pajarito or Arroz with Plátano Maduro is a popular outline in Colombia. It is a very simple and easy recipe to make, perfect for accompanying all types of main Colombian dishes.
There are different variations of this dish, depending on the region of Colombia and the cook. My recipe is a basic and popular variation, but some people will add coconut, garlic, onions or bacon to the mix.
This recipe was born in Magdalena, a department in Colombia, located in the north of the country near the Caribbean Ocean.

Add fresh coriander or parsley for further freshness before serving.

Ingredients you need

Plantains: You will need mature or yellow plane trees to prepare Arroz de Pajarito.
Rice: I prefer to use long grain rice for this recipe. I like the plot.
Oil: I recommend using vegetables, canor or corn oil for this dish.
Butter: Gives rice a rich flavor.
Salt: Gives flavor to the dish.
Waterfall: To cook the rice.

How to make rice for birds
- Cook the ripe cubes in a pan with the oil until they are golden. Set aside.
- Put the rice in an average saucepan. Then add the butter, water and salt.
- Bring to a boil over medium heat -alto. Mix once, cover, reduce the low heat and cook for about 10 minutes.
- Add the ripe plane trees and mix well. Cover again and continue cooking for about 10 minutes more. Remove the pan from the stove and let it rest for 5 minutes. Flug the rice using a fork and serve immediately.

- 1 Mature plantain cut into cubes
- 3 spoons of vegetable oil or Canola
