Lamb is the most popular meat used in Kashmir’s cuisine. Wazwan, a royal party, which is a diffusion of multiple courses consists mainly non -vegetarian dishes. Most of the dishes are lamb -based dishes, chicken is also used. It is a party suitable for kings and consists of a series of a banquet of about 30 courses. Rogan Gosh, Goshtaba, Saffron Pulao, Kahwa, Phnee is some of the most popular dishes. In the Kashmir cuisine of cooking is used in most dishes, both for sauce and marinade. A range of aromatic spices, dried fruit, ghi, saffron, red chirons of the Kashmir are used in the kitchen. This yogurt lamb curry is not really an authentic Kashmir curry, because traditionally Mawal flowers are used in curry. Since I have no access to Mawal flowers I changed the recipe according to my comfort.
Serve the yogurt lamb curry together with the rice, the Lachha Paathas wheat or the Naan garlic for a perfect meal.
