When the temperature starts to climb and the last thing you want is more heat in your kitchen, this is the appetizer recipe that comes to the rescue. Our blackened Tilapia and the Crostinis watermelon sauce are refreshing, satisfactory and – better than all – require the zero time of the oven. With a few minutes of grilled trend, you will have an impressive dish that offers a great flavor with minimal effort!
We are real: between work, the family and the dozen of other commitments in competition for your attention, who has hours to spend in elaborate preparation of the party? Certainly not! That’s why we are officially declaring a new era of effortless entertainment. This fish appetizer perfectly embodies our favorite hosting philosophy: Kiss (Aka … “Keep it simple seafood!”) Dishes that seem impressive but combine with a minimum effort. It is the equivalent cooked in the house that you seem that you tried without having to really try too much!
Our favorite part of this recipe lies in its intelligent use of the grid (bringing you outside your normal cooking routine) and in the game of conflicting flavors and plots. The slight character and La Spezia of Tilapia Annerita create a perfect counterpoint for sweet and juicy watermelon (a seasonal favorite of which we never have enough). Each bite offers contrasting ingredients: crispy toasted baguette against tender fish, together with the fresh pop of basil and thin jalapeño heat. It is an incredible balance that makes every taste more interesting than the last.
Prepare the components in advance and assembles just before the arrival of the guests. The watermelon sauce can be made hours ahead (it improves the flavor to let it rest in the fridge for a while) – and the fish cooks in a few minutes. Top with crumbled feta and a rain of balsamic glaze right before serving for that presentation worthy of the restaurant that we all want to get!
Note on a quick margin and hot recovery: Tilapia deserves more attention in the regular cooking rotation. This adaptable white fish takes on any flavors that you make road offering serious nutritional benefits. Each portion includes over 20 grams of protein while keeping calories low. It is also full of potassium (crucial for heart and renal function) and essential nutrients such as vitamin D and magnesium. Keep the Tilapia fillets enveloped individually in the freezer and you are always a few minutes from a meal rich in protein or an impressive appetizer. It is an excellent solution when it is necessary to serve something that says “upscale” and requires minimal confusion.

- 2 tablespoons olive oil, divided
- 1½ Tilapia pound
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon oregano
- ¼ teaspoon Cayenne pepper
- ¼ teaspoon salt
- 1 Baguette, thinly sliced ¼-inch pieces
- 2 cups Atremelon, diced
- ¼ Red onion, finely diced
- ½ Jalapeño, chopped
- ½ lime, squeezed
- Pinch of salt
- ¼–½ Cup of fresh basil, chopped in thin ribbons
- ½ cup Feta Cheese, diced in small pieces
- Just ground black pepper
- Balsamic glaze (optional)
- Preheat the medium-high grid. Put the fish on a plate. Sprinkle both sides of fish with 1½ tablespoons of olive oil; set aside.
- Prepare the blackened dressing by combining paprika, onion powder, oregano, pepper of cayenna and goes up in a small bowl. Uniformly cover both sides of the fish with blackened dressing. Put the fish on the grill; Cook 3-4 minutes per side or until the fish is cooked thoroughly.
- While the fish cooks, prepare the sauce by combining watermelon, red onion, jalapeño, lime juice and salt in a small bowl. Fold the basil in; Mix gently.
- Fredi di bread with remaining olive oil. Put the slices of bread on the grill using pliers and grid for about 1 minutes or until not desired.
- Divide the cooked fish into 12 pieces of croutons (about 2 “x3”) and positioned above croutons; Top with watermelon sauce, feta and a splash of freshly ground black pepper. Then season with balsamic glaze, if desired.
