Dressing the watermelon fruit salad with honey-light syrup and toasted pistachios is an easy way to transform the summer melon into something really worthy of celebration.

Watermelon is one of my favorite summer fruits; It is juicy, refreshing and naturally sweet, which means that it really doesn’t need much to shine. In this recipe, I coup with singing for a contrast of color and season everything with a honey syrup with infused with brightness citrus by fresh lime, a pinch of brown sugar and a crunchy bite and hazelnut of toasted pistachios. It is a quick update that makes fresh fruit sing.

I love serving it as a refreshing side for a collection of courtyard or as a light and colorful dessert after a grilled meal. What if you have leftovers? They are wonderful for breakfast the next day with a ball of creamy Greek yogurt.

What’s in waterfall salad?

You don’t need many ingredients to prepare this fruit salad for sweet, tart and crunchy watermelon. Feel free to use any color watermelon or exchange in other types of melon for the melon!

Add 3 tablespoons of honey and 1 tablespoon of dark brown sugar to pistachios and heat, stirring constantly, for about 1 minute or until the brown sugar is completely dissolved. Turn off the heat and mix the grated zest and the juice of 2 large lime (about 1/4 cup of juice). Put aside to cool for 5 minutes. Taste and, if necessary, add more honey.
