Yucca: Also known as Manioca is a root vegetable. For this recipe you can use fresh or frozen. It can be found at the local supermarket at the Latin corridor.

Oil: I like to use olive oil to roast my yuca.

Spices: Parsley leaves, salt, pepper, garlic, onion, paprika and cumin powder.

How to prepare the roast yuca

  • Preheat the oven at 400 ° F
  • In a large pot with salted water, cook the yuca for 15 minutes. Drain a set aside.
  • In a medium bowl mix the olive oil, spices, salt and pepper. Add the yuca to the mixture, launching to cover.
