During our trip to Japan, I tried an Ethiopian injera dish for the first time. He arrived with several tasty contours such as Doro Wat (chicken stove), Misir Wat (SWIT of Lentil), Tikil Gomen (Ski potatoes and carrots), Sega Wat (beef stove). All these dishes were made using an authentic spice mixture called Berber. After returning from our journey, I decided to recreate the meal, so I started with my mix of Berber spices at home. And I liked how it came out!

Information about Berbere Spice Mix
Berbere is a mixture of traditional and authentic Ethiopian spices that is so aromatic, spicy and tasty. It is an essential ingredient in Ethiopian dishes such as meat stew, lentilly and marinating meats and vegetables. Berbere is used in meals based on injera dishes, where spicy stews such as Doro Wat (chicken stew), Misir Wat (Lentils Stew) are served with fermented Flatbread also known as Injera. The spicy curry are made with Berbere Spice who balances well with the spicy flavor of Injera and makes it irresistible.
Berber is a mixture of dry spices produced by mixing spices such as chili pepper, cinnamon, cloves, nutmeg, cardamom and coriander. It is a spiced spiced powder, slightly sweet, smoky and aromatic used in the Ethiopian cuisine. This spice powder is more similar to our Indian powder Garam Masala, only a few ingredients differ.
Having homemade spice Berbere is so easy. It is usually prepared by toasting whole spices and therefore grinding them in fine powder. Chilli powder: Chili dust provides the bold heat and flavor to Berbere. For substitutes, try with cayenna dust or paprika dust for vibrant red and spices.
Garlic powder: The garlic powder adds a salty and pungent flavor to the Berbere mixture.
Onion powder: Onion powder gives a sweet and aromatic flavor
Nutmeg Powder: Walnut powder offers a delicate sweet taste that balances spices.
Ginger dust: Ginger dust gives a pungent and light spicy flavor.


Whole coriander seeds: Coriander seeds have a flavor of warm and slight citrus fruits. I used whole coriander seeds for roasting. Otherwise, you can also replace coriander powder. But the flavor can be less intense while using coriander powder.
Cumin seeds: Cumin seeds add a warm, earthy and hazelnut flavor to the spice mixture. You can also replace with cumin powder, but the flavor will not be so rich.
Seeds ajwain / carom: Ajwain seeds add a slight flavor of spice herbs and also helps digestion.
Whole black pepper: The whole black pepper adds a strong and spicy heat to the spice mixture. Machinata pepper powder can also be replaced, but it is better to use for cooler aroma.
Cinnamon : Cinnamon has a sweet and woody aroma. It helps to balance the heat of the chilli pepper.
Cloves: The cloves add a sweet and aromatic flavor to the berbere spice mixture.
Cardamom: Cardamom has a sweet and floral flavor that improves the taste of Berber spices mix.

Superior roast for stove: In a heavy background pan, add the whole spice one by one. Roasted slowly on medium low heat.
Roast in the oven: The roasting of the oven The spices is excellent for large production lots and is also one of the quick methods for roasting. Preheated the oven at 180 degrees Celsius. In a pan, spread the spices and brutal without adding or spraying oil. It will take about 5-8 minutes. Then remove the tray from the oven and cool it. Once cooled, macinal powder using a blender.

1) I am brushing the whole spices in a pan. Mix over low heat until the spices are well roasted and fragrant.

7) Add the chilli dust.


8) Blend until good.


9) Now the spices merge well. Cool and keep in a narrow air container.

- Make sure to measure spices to get the best flavors and aroma.
- Use fresh and whole spices for roasting as it provides the best flavor to the Berber spice mix.
- Room the spices on low flames to avoid burning.
- If you have no whole spices, replace with pre-surface spices powders.
- Sift the spice powder after ground for a fine fine powder.
- Store the mix of spices in an airtight container.
Warehouse
Cool the Masala of powdered spices and keep it in an airtight container. It remains well for months. Always use a dry spoon when gathering spice powder.

Doro something – A spicy chicken -based chicken stew, onion, ginger, garlic, hard -boiled eggs and Berbere is used as the main spice on this dish.
Egypt Wat – It is a stew of vegetable lentils, served with Injera.
Mix La Spezia Berber in yogurt or sour cream to create a spicy dip and serve with pita bread.
The spicy vegetable roasting can be prepared by toasting the cauliflower, carrot, carrot in olive oil and sprinkling with a generous amount of Berber spices powder.
