Kids love broccoli so much that most of the time I make roasted broccoli and this broccoli cheese. This soup recipe is my latest obsession. It is a creamy soup made with garlic, onion and broccoli.

Broccoli soup is one of the simplest soup recipes you can make. This is also known as broccoli cream soup. This broccoli soup is made with butter, garlic, onions, carrots, broccoli, cream and milk. The soup contains little flour used to create a creamy base.
The soup can be customized to your preference. You can use corn starch, wheat flour instead of plain flour. Cream can be skipped in this recipe. And if you prefer you can blend the whole soup to obtain a super creamy consistency.
I like to serve this broccoli soup with some kind of sandwiches.

Ingredients for broccoli cream soup


Broccoli – as usual to prepare soups and any dish, use the freshest vegetables you can find. It makes a difference.
Onions and garlic – I used red onion, you can also use white onion. Garlic adds an earthy flavor to the soup.
Carrots – while this is optional, I like to use carrots for added sweetness and nutrition.
Simple flour – Instead of plain flour, you can use wheat flour or corn starch.
Condiments – For the soup I only used salt and white pepper powder.
Action – you can use vegetable broth or chicken broth to prepare the soup base.
Milk cream – use whole milk for a rich and creamy soup consistency. You can skip the cream in this recipe for the low-calorie version. And olive oil can be used instead of butter.
Fat of choice – I used butter, but you can use olive oil or any neutral oil.


How to make broccoli soup (step by step images)
1)Heat the butter in a Dutch oven or deep pot. Add the finely chopped garlic and sauté over low heat for 1 minute until the garlic becomes aromatic.


2)Add the finely chopped onions and carrots. I like to chop them quite finely, so they disintegrate into the soup.


3)Fry the onions and carrots in butter for 2 to 3 minutes over low heat until they soften slightly.


4) Add 2 tablespoons of 00 flour. This is to create thickness in the soup.


5) Fry the flour with the onions and carrots for a couple of minutes to eliminate the raw flour taste.


6)Add the finely chopped broccoli to the mixture.


7) Season the broccoli with salt and white pepper powder. Fry for 2 minutes so that the broccoli softens a little.


8)Add 3 cups of vegetable broth or chicken broth and mix well. The flour and broccoli mixture will combine with the soup.


8) Now add 1 cup of milk.


9) Mix everything together. At this point you can adjust the salt and seasoning in this soup.


10)Cover the pan with a lid, cook over low heat for 10 minutes until the broccoli is cooked.


11)Now open the lid. Add the cream which is optional.


12) Mix well, taste the seasoning and adjust. Serve hot with sandwiches.
