Coconut Milk Sago looks more like a pudding in western dessert, but lighter and more runs as it is not destined to become solid. The unique gummy consistency of Sago Pearls is so compelling and is fine with the base of slightly sugary coconut milk.
It is an excellent option such as snacks or desserts and is extremely easy to make in a pot. Everything you need is to boil the sago pearls in the water, add the sweetened coconut milk and serve with condiments!


What is Sago?
Sago is a starch extracted from the Sago palm cord. It is commonly used in desserts or savory dishes in the South -est Asia. Once it absorbs the liquid, it becomes translucent and develops a rubbery and rebound consistency with a slight hazel flavor.
Sago vs tapioca
Although sago and tapioca are used in a similar way, tapioca is made with a cloak tuber plan. Tapioca pearls are larger than sago pearls and are often used in bubble tea. Sago and Tapioca can be used interchangeable in some recipes.

How to prepare coconut milk sago
Step 1. In a large saucepan, it brings 6 cups of boiling water. Add the sago and cook for 10 minutes, stirring occasionally to avoid attacking.
Step 2. Turn off the heat and cover the saucepan with a lid. Let it rest for about 15 minutes until the sago is translucent and completely cooked.
Step 3. Fully drain the water using a fine mesh sieve. Rinse under cold water.




Step 4. In an empty saucepan, place coconut milk, almond milk, maple syrup, vanilla and salt. Cook over medium heat and mix until all the ingredients are well combined.
Step 5. Turn off the heat and mix the cooked sago. Transfer to a storage container. Cover and cool up to cold, for at least an hour.




Step 6. Divide into small cups. Garnish with strawberries and coconut flakes.

Suggestions
- It is not necessary to smooth the lumps of fat in coconut milk. They will melt while heating the mix in the saucepan.
- Do not boil the coconut milk mixture. He will further cook tapioca!
- Coconut milk sago can become more often over time (after a day of two) while more starch is released into coconut milk. You can loosen by adding a little almond milk or milk of your choice. Regulates sweetness with more maple syrup if necessary.
