Bruschetta With Burrata, Brussels Sprouts, & Pancetta

It’s been a long winter, although reasonably mild, so I shouldn’t complain, I’m looking forward to spring. During the holidays I was so busy cooking for the family that I never had time to stop and take photos. I’ve made several new appetizers and snacks for my family that have received rave reviews, including this flavorful bruschetta.

I’m a big fan of bruschetta because it’s always a quick and easy snack or appetizer to prepare. If I want to make a regular midweek meal more memorable, I will often add a simple appetizer to the menu. Bruschetta is also an easy treat to offer to unexpected guests who stop by for a glass of wine or to serve to a large group at a gathering.

You can top bruschetta with any number of toppings, from a simple drizzle of amazing extra virgin olive oil to a multi-ingredient dressing like this one. I assembled this appetizer after putting some leftover roasted Brussels sprouts from dinner the night before and some creamy burrata in my fridge.

Our local grocery store offers a wide selection of delicious Italian cheeses, including a readily available selection of buffalo mozzarella and burrata. Instead of burrata, if not available in your area, you could use quality fresh mozzarella or even creamy goat’s cheese.

After topping my slices of toast with sliced ​​burrata, then slices of Brussels sprouts, I finished the bruschetta with some chopped hazelnuts, chopped black peppers and a drizzle of chestnut honey. This is a bruschetta with a full and unique flavor that everyone likes.

Ingredients

  • 1 large, crusty baguette, cut into 3/4-inch slices (you will need 8 slices)

  • 3 tablespoons of olive oil

  • 2 Scoops of Burrata at Room Temperature

  • 3 cups roasted Brussels sprouts, thinly sliced

  • 1/2 cup diced bacon, cooked

  • 1/4 cup coarsely chopped hazelnuts

  • Cracked Black Pepper

  • 3 tablespoons chestnut or flavored honey

Instructions

    1. Preheat the grill and place the baguette slices on a baking sheet.
    2. Cook until lightly browned, then turn and brown the other side.
    3. Brush the bread slices with olive oil.
    4. Cut the burrata into pieces and cover the slices with the burrata.
    5. Spread the Brussels sprouts, bacon and hazelnuts over the cheese.
    6. Season the slices with honey and cracked pepper, then serve and enjoy!
