Soba noodle soup – the easiest and fastest Japanese soba soup ever. It takes 15 minutes and restaurant quality, so delicious!

I love all types of noodles, but if I had to pick one of my favorites, it would probably be Japanese soba, or buckwheat noodles.
There are many reasons why I love soba: the slippery, smooth texture and delicate taste of buckwheat flour. Served cold or hot with a broth, soba never fails to please my palate. Another thing I love about soba is the convenience of making the noodles.
Soba usually comes in individual portion packets, so there’s no prep work needed to measure, soak, and rinse. All I have to do is peel off the paper wrapping holding the noodles together, place them in a pot of boiling water, and within minutes the soba noodles are ready to serve.


This 15 minute soba noodle soup is the quickest and easiest way to make a quick lunch. It really only takes 15 minutes and you’ll have a great portion of healthy and delicious soba in a delicious soup.
You can use a variety of seasonings like my recipe or you can add shrimp, peas, spinach or whatever you like.
I make this soba soup recipe over and over again, but it has never stopped delighting me. Try it and I’m sure you will have fun!

Heat a pan of water and bring it to a boil. Cook soba noodles al dente, about 5 minutes. Drain and set aside in a bowl.
