As Easter approached I was looking for a new recipe for a special long weekend breakfast or brunch. While rummaging through my bookmarks I came across this recipe for a spinach and feta clafoutis that I saved some time ago Nothing but burnt toast and my search for a tasty breakfast was over. A clafouti is a French dish in which an egg batter is cooked, usually filled with something and until I came across this recipe I had never even considered the possibility of a savory clafouti. I immediately knew I had to try a savory clafouti and this one was perfect because it was full of some of my favorite Greek flavors with spinach and feta. In fact, the flavors reminded me of spanakopita, a Greek spinach pie that I’ve enjoyed transforming into different dishes over the years.
This clafoutis is pretty simple to make, making it perfect for brunch or light weeknight meals. You basically just sauté some onions, wilt the spinach, pour over the egg batter and cheese, and cook until golden brown. Despite the minimal effort required to make it, this clafoutis is a tasty dish! The combination of spinach and feta along with fresh dill definitely works well in a tasty clafoutis! Now I’ve already planned breakfast for the weekend and I already have other ideas in mind for dancing savory clafoutis.

ingredients
- 1 tablespoon olive oil
- 1/2 onion (diced)
- 2 green onions (sliced)
- 5 ounces baby spinach (coarsely chopped)
- 1 tablespoon dill (chopped)
- 1 tablespoon parsley (chopped)
- salt and pepper to taste
- 1 cup of milk
- 3 eggs
- 2 tablespoons all-purpose flour
- 1/2 cup feta (crumbled)
- 1 cup kasseri or mozzarella (grated)
directions
- Heat the oil in a pan.
- Add the onion and sauté until tender, about 5-7 minutes.
- Add the green onion and spinach and sauté until the spinach wilts.
- Remove from the heat and add the dill and parsley and season with salt and pepper.
- Pour the spinach mixture into a shallow 6-cup baking dish.
- Mix the milk, eggs and flour in a food processor and pour over the spinach.
- Sprinkle the feta and mozzarella on top.
- Bake in a preheated 350°F/180°C oven until puffed and golden on top, about 20-30 minutes.
