  • Chicken breasts: You want uniformly sized chicken breasts for even cooking. Try purchasing chicken that has not been injected with saline for best results.
  • Broccoli florets: Cut into medium sized (small sized) florets. You can use frozen broccoli, but it will be much softer.
  • Garlic: Freshly chopped garlic packs the most flavor. The jarred ones work too, but the flavor always has a little more bitterness.
  • Lemon (peeled and squeezed): You’re using both zest and juice on this one, so don’t forget to peel it first!
  • Lemon pepper: This seasoning blend adds a great hit of lemon zing. We love it!
  • Parmesan: Best grated or chopped fresh. Avoid the powdered one because it may not dissolve as well.

Chicken injected with saline vs natural

When you buy chicken, you may notice terms like “saline-injected” or “enhanced” on the packaging. This means that the chicken has been infused with a salt water solution, often to increase its moisture and keep it fresh on store shelves. While this added solution can help the chicken stay juicy, it can also affect how well your vegetables cook.

Chicken injected with brine typically releases more liquid during cooking, which can make the broccoli a little softer as the extra moisture limits browning. To keep vegetables crispier, consider roasting them on a baking sheet if using brine-injected chicken.

Natural or unenriched chicken doesn’t release as much liquid, allowing vegetables to roast evenly alongside it for that ideal texture. For best results and to avoid paying extra for added water, look for “natural” chicken on the label.

Baking pan or 9×13

The recipe as written requires a 9×13 baking pan, but you can also use a baking pan to prepare this dinner. What’s the difference? Using a 9×13 pan will retain more steam and juices, resulting in more flavorful cooking that will keep the chicken and broccoli more moist. This is great if you plan to serve it with rice or pasta, as you can add a little of the pan juices for added flavor.

A baking sheet allows more liquid to evaporate, creating a slightly crispier texture on the chicken and broccoli. The broccoli will have slightly caramelized edges. Feel free to use whatever works for you.

Serving Tips

Instructions for storage and heating

Refrigerate leftovers in an airtight container for up to 3 days.

Heat in the microwave up in 30 second increments.

Reheating in the air fryer at 350°F. Arrange the chicken and broccoli in a single layer in the basket and heat for 3 to 5 minutes or until hot.
