We read about a study that analyzed the nutritional quality of 10 varieties of sprouts, including: sunflower, mustard and radish. They analyzed proteins, calcium, magnesium, potassium, antinutrients and vitamins C, D, E and A.
They compared these results with the values of mature spinach and were able to conclude that all sprouts studied had overall higher levels of nutrients and lower levels of antinutrients.
For this reason they were able to conclude that the nutritional quality of sprouts was 2 to 3.5 times higher than that of spinach. We all know that spinach is a super nutritious vegetable!
