Skyline style chili pepper coney
I grew up with chilli dogs and thought I knew something or two. But let me tell you, nothing could have prepared for that first bite of a skyline -style coney. This is not your medium courtyard dog. My soft, rich, smooth chili pepper in skyline style is draped on a juicy hot dog, then seasoned with finely cutting keddars and diced onions before being set on a hot sandwich. It is disordered, it is comforting and wildly good.
What is a cone of skyline?
These dogs are inspired by the famous Skyline Diner from Cincinnati. They are called “coneys” because Greek immigrants aimed at the legendary dog Coney Island when they brought this style to the Midwest. What makes them different is chili pepper. It is spicy like a meat sauce tied to the cinnamon and first does not brown the meat. I know, I know. This goes against every instinct that I have as griller. But trust me. Works.


Ingredients for Skyline cheese coneys
An adequate cone Skyline has only a few simple ingredients, but everyone is the key to the finished product:
- The chilli: Smooth, impertinent and loaded with hot spices such as cinnamon, pimento and cloves. I included the recipe for my (skyline) cincinnati kilos in the recipe card, so you can do them totally from scratch. - Dogs: When I do these coney, I recommend using All-Beef hot dogs. Whether you gray, fumes or steam rooms your dogs, I have a murder suggestion arriving later.
- The condiments: One holding yellow mustard, a sprinkling of finely diced onions and a tumult full of (I cannot underline quite this) finely curious cherdar cheese.
- The sandwich: The coneys traditionally come on a steam sandwich, but I will admit that I went a little thief and toasted mine. It’s your courtyard, so you do it.
Do you want to skip the sandwich? Skyline offers a “cony bowl” (no sandwich, all seasonings, large fork energy), if you want to transmit carbohydrates and pretend that it is greeting.


How to prepare Skyline Coney Dogs
These coneys concern layers of bold and unexpected flavors on a humble hot dog. From that pepper of Speziata sweet to the Cherdar mountain, each bite is the classic comfort food with a touch of cincy.
- Look down the low and slow chili pepper. Skyline style chilli is smooth and spicy with cinnamon and cloves. Unlike most chillies, first don’t brown you. Cook directly in the liquid for an ultra-flaine plot. I add a quick burning for a little more flavor, but you can jump it if you want a traditional grip. The consistency should be dissolved and paid, not thick or big.
- Cook the hot dogs. Grilled, smokedboiled, steamed, everything works. Remember alone, I have a special suggestion for the hot dog finish.
- Prepare the condiments. The Cheddar should be finely destroyed, so well that you almost question its existence. Use a Good knife To cut small onions for an acute bite and do not forget that classic yellow mustard zigzag. The tang cuts all the wealth and binds everything together.
- Steam or toasted sandwiches. Skyline uses soft and steam cooked sandwiches, but if you are grilling, even a quick toast works. It is enough enough enough to resist that chilli pepper without falling into pieces.
- Build your coneys. Start with a hot sandwich and a hot dog, add the mustard, then a spoonful of chilli pepper, a sprinkling of onions and that cloud of cheese signed. Messy? Decidedly. But it’s worth it.


Hot Dog Hock: Chili Bathroom Finish
A fun trick that I collected from my friend @Grillinwithdad It’s ending your hot dogs in the chilli pepper. Once the sauce is cleared, let those dogs fall into the pot and let them soak in the last 10 minutes. They immerse the flavor and remain super juicy, as well as collecting some of that spicy wealth from chilli. Total game change.
Don’t you think me? My teenager and some of his friends arrived the day I tested this recipe and ate the hot dogs directly from the chili pepper. Maybe we are thinking too much about things with these sandwiches.

Cook over low heat, prepare the condiments and cook the hot dogs. Reduce the heat on the low pepper, cover with a lid and cook over low heat for 30-45 minutes.
