Ridge Gourd Pachadi Recipe - Ridge Gourd Chutney

Pumpkin Ridge has many nutritional benefits as it is loaded with fiber, vitamins and minerals. From an Ayurvedic point of view, the ridge pumpkin increases Vata and Kapha, but the dosha pitta in the body cools and peaceful. Since the ridge pumpkin is low in saturated fats and cholesterol, it is the ideal diet for those who are looking for weight loss.

The Ridge Pachadi pumpkin is a typical South-Indian condiment. The word Pachadi is a Portmanteau of Pachai words, which means raw or green and ADI, which means beating or grinding. It is a spicy chutney made by hammering or grinding an assortment of vegetables with spices. Usually the vegetables are used raw, but sometimes they are slightly cooked in a little oil as in the recipe below.

Serve this croqued pumpkin pachadi together with Rasam, steam rice and mixed vegetable curry for lunch next time.
