The remaining pasta mixed with sauce can be kept in the fridge for a maximum of 3 days and heated in the microwave. I like to cook the leftovers in the oven with a grated Parmesan condiment or cut mozzarella (or both!).

Yes, this recipe is both vegan and vegetarian as it is, but if you want to serve with grated cheese, use a vegetarian Parmesan. The Italian Parmesan is not vegetarian as it is made with the cuddle of animals.
You can easily prepare the tomato sauce in advance! It will last in an airtight container for a maximum of 5 days in the refrigerator. Alternatively, prepare a double or triple lot and freezes the extra sauce in a safe container for the freezer for a maximum of 3 months.
