Pastel Gloria is a traditional Colombian dessert. It is delicious with the perfect combination of sweet and salty.

Today I would like to introduce one of my favorite traditional Colombian desserts. Which, comfortably, is also ridiculously easy to make. I have no idea how Gloria Cake I took his name, but it’s a popular dessert in my country.

What is Pastel Gloria?
It is essentially a puff pastry full of Dulce de leche (Area), Paste Guava (Bocadillo) and cheese.
In Colombia you can find these delicious desserts in every bakery. They are easy and quick to make and perfect with cup or tea or coffee.

Ingredients you need
The printable recipe card with exact quantities and cooking indications is below
Puff pastry: I prefer to use frozen pastry for the bough to make this recipe, because it is easy for me. But you can create one of yours from scratch if you prefer.
Caramel sauce: I have a homemade Dulce de leche recipe if you want to use it, but you can buy it in any supermarket or online if you prefer.
Guava pasta: Bocadillo in Colombia is also a very popular sweet ingredient in Latin America. You can find it in Latin or online markets.
Sugar: It adds a little crunch to the pastels. This is an optional ingredient, but I really like the consistency.
Cheese: I like to use mozzarella, but this too will work.
Egg: To seal the desserts and add above before cooking.

How to make pastel glory
Preheat the oven to 400 degrees F.

Farceto a clean and dry counter or other flat work surface. Arrange the puffed mess on the floured surface. Beat the upper part of the dough. Spread the puff pastry until it is thick (about ⅛ thumb).

Using a large biscuits cutter, cut the edges of each circle with egg in 24 circles and brush. A small center of each circle, place 1 slice of guava pasta, 1 slice of cheese and about ½ tablespoon of Dulce de leche. Place another circle at the top to enclose the filling.

Crimpa the edges with a fork. Repeat with the remaining pastures, placing them on a baking sheet lined with parchment paper while proceeding. Cook for 20 minutes or until golden brown and swollen.

Sprinkle with the sugar at the top, then cool the pastels on a rack for 10 minutes. Serve hot or ambient temperature.
