To start preparing Mundhiri Masala Kurma’s recipe, heat the gi in a pan with a heavy bottom. Add 5-6 anacardi and fry for 2-3 minutes until they are medium brown in color. Once done, keep it aside
In a blender, take the remaining anacards and grind a fine powder and keep aside.
In the same blender, add chopped onions, ginger, garlic and make it a fine paste without adding water.
Heat the GHI in a pan on the heavy bottom, add the garlic paste to the onion ginger and brown for a minute until the raw smell disappears.
Add the curry leaves, anacardi, turmeric powder, red chilli pepper, garam masala powder and sambar dust. Go up for a minute until it forms good consistency like Masala.
Once done, add the tomato puree and a cup of water and lets Mundhiri Masala Kurma simultaneously simmer for 3-4 minutes. Check the salt and spices and season accordingly.
Finally transfer Mundhiri Masala Kurma to a serving bowl and complete it with the roasted anacards.
