These sweet lemon muffins are one of my favorite muffins! I love all the things of the lemon and the brilliant citrus flavor of these soft and delicious muffins is perfect for spring and summer. Make a lot to be enjoyed for breakfast or fast afternoon snack!

Necessary equipment

This recipe uses only some standard oven equipment, then collect the following items to create muffins:

  • Wooden spoon or My favorite rubber spatula
  • Standard muffin pan – I often use this silicone As it makes it easy to remove, it is super easy to clean and I do not use muffin lining.

Poppy seed lemon ingredients

These muffins are made with fresh and simple ingredients. Here’s what you need:

  • Flour for all uses
  • Granal white sugar
  • Baking powder
  • Baking soda
  • Salt
  • Poppy
  • Vegetable oil
  • Not salty butter, melted
  • Whole milk
  • Fresh lemon juice
  • Vanilla
  • Fresh lemon zest

How to prepare lemon muffins with poppy seeds

  1. First, preheat your oven to 375 ℉ and align the muffin box with paper lining.
  2. So mix all the dry ingredients (flour, sugar, yeast, baking soda, salt and poppy seeds) in a large bowl.
  3. Then make a well in the dry ingredients and add all the wet ingredients (vegetable oil, melted butter, milk, lemon juice and vanilla) to the mixture of flour.
  4. Mix until combined and then fold the lemon zest.
  5. Add about ¼ cup of muffin batter to each of the prepared muffins cups.
  6. Finally, cook for about 20-25 minutes or until they start to become light golden brown. A toothpick inserted in the center should go out clean or with some wet crumbs.
  7. Leave to cool lightly in the pan, then remove the hot muffins on a wire rack to cool completely. If you wish, season a simple glaze and have fun!

How many fresh lemons do I need to prepare 2 tablespoons of lemon zest?

It takes 1 medium to large lemon for 2 tablespoons of lemon zest. This size the lemon can also easily give you the 1 tablespoon of lemon juice you need.

Is there a simple glaze that I can use with these muffins?

YES! Try to prepare a spicy lemon glaze, mixing 1 cup of icing sugar, 1 tablespoon of milk and 1 teaspoon of lemon extract. Or, 1 cup of icing sugar and 1-2 tablespoons of lemon juice. Rule for your preferences.

How do I keep muffins of the remaining lemon poppy seeds?

Store the remaining muffins in an airtight container at room temperature for a maximum of 4-5 days. Or freeze the muffins for a maximum of one month in a freezer bag or in an airtight container. Defrost before serving.

How will I know when they are made to cook?

You will know when these muffins have finished cooking when they start to brown above or when they stick a toothpick or a tester for cake in the center and go out clean or with some crumbs. If the toothpick still has the battered batter on it, then cook for a few more minutes.

Do I have to add the lemon zest?

It is not necessary, but it provides a stronger lemon flavor to the batter and I like to add it. I simply don’t think muffins have Lemony enough without it. If you choose to omit lemon zest, be sure to create a simple lemon glaze, as described above!
