Ingredients

Horse Gram / Kollu / Kanam: This little legume is the heart of our Thogayal recipe. There are two types of horses available on the market: the black and brown horse. You can use any variety of your choice. Dry roasting the Kollu to improve digestion and remove the raw smell.
COCONUT : Coconut adds a rich and creamy consistency to the Thogayal. For the Thogayal without dairy products -caseari, you can replace almonds or anacardi. You can even use dried or frozen coconut instead of fresh coconut. Consistency and flavor can differ accordingly.
GARLIC : The garlic adds a depth and a tasty aroma to the Thogayal. You can even skip the garlic in a pan before grinding. If you want to improve digestion, you can also add a piece of ginger during grinding.
Dry red chilli pepper: Dry red chilli pepper is added to kicking the spectiality in the Thogayal. You can adjust the amount of red chilli pepper according to the spice level. You can also replace the green chili pepper or add the red chili pepper of the Kashmir which is less spicy and adds a vibrant color to the Thogayal.
Salt: The salt is added to balance the overall flavor and taste. WATERFALL : The water can be according to your favorite Thogayal consistency.

Hack
Horsegram cleaning: First spread the Kollu on a plate. Remove any small stones or dirt particles before cooking.
Dry roast: In a pan, dry roasted the low flame kollu until you start. It should be a nice golden and aromatic brown.
Immerse: Wash the dry roasted horse and dip it in water for 10 minutes.
Grinding: Grind the horse soaked with the rest of the ingredients in a blender.

- The kollu (horse) is always dry to avoid raw and bitter taste.
- You can even cook the horse with 2-3 whistles. Then grind the cooked horse with other ingredients to prepare Thogayal.
- The dried coconut can be used instead of fresh coconut.
- A small piece of tamarind can be used during grinding to add Tangozza to Thogayal.
- You can even use the gram of black horses instead of the brown horse.
- Instead of grinding the ingredients as raw, you can even skip the red chili pepper, coconut and garlic in a pan and prepare the Thogayal.
- For a crunchy and hazelnut flavor, you can add roasted peanuts during grinding.
Archiving and portion
Kollu Thogayal can be kept in an airtight container. It remains well for 1-3 days in the refrigerator.
You can serve the thogayal kollu with idli, dosai, Rot Hot rice with a spoonful of clarified butter or gingelly oil. Horsegram is one of the legumes used for weight loss, so you can use it as a diffusion for your sandwich or winding.

Variations
All Podi: Kollu Podi is an instantaneous version of the Thogayal recipe. All you need to do is roasting the ingredients such as horse, garlic, cumin, dry red chilli separately and grinding them powder. This podium can be kept up to a month in an airtight container. You can serve it with rice or even like Kollu Idli Podi with a spoonful of oil or clarified butter.
Civil / Weups: Kollu Rasam / Soup is one of the healthy and comforting recipes to be consumed during a cold cough. It is perfect for the hot climate. You can start by preparing the base of Rasam with garlic, cumin, chilli pepper, tamarind and finally add to the cooked razor raised pressure. Serve with a bowl of hot rice.
Onion Kolu Thogayal: In this variation, it is possible to add an onion / shallot / large onion with horse. Fry the onion until they do not candy and grind with other ingredients. It adds little sweetness to the Thogayal.
