Mahi Mahi (also known as Common Dolphinfis or Dorado) is a mild tropical fish with a firm consistency that rents beautifully on the grill. It is a fantastic choice for the grid because it remains juicy, it is not easily pieces and absorbs bold flavors like a sample.


How to choose and prepare for the Mahi Mahi
For the best results, it starts with high quality Mahi Mahi. Look for still, wet (not slimy) fillets and have a fresh and mild oceanic perfume. If you buy a frozen, thaw it during the night in the refrigerator or immerse it in cold water for faster defrosting.
Before grilling, dab the fillets dried with a paper napkin. This better helps the dressing stick and gives you a great scald.

- 1 tablespoon Smoked paprika
- 2 teaspoons salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Cayenne pepper
- ¾ teaspoon Fresh ground white pepper
- ¾ teaspoon broken black pepper
- ½ teaspoon dry thyme leaves
- ½ teaspoon Dry oregano
The blackened dressing adds a smoky and spicy kick that completes the delicate fish without overwhelming it. If you prefer a lighter option, try a simple mix of salt, pepper, garlic powder and lemon zest for a fresh and bright flavor.

Preheat. Preheat your grid at 425 degrees F.

Condish the work job. Brush the Mahi Mahi fillets with melted butter. Season the Mahi Mahi on all sides with the blackened dressing.
