This alfajores recipe is easy to make and absolutely delicious. Perfect for snacks or desserts with a cup of coffee or tea.

What they are Caramel biscuits?
Alfajor is a sugar biscuit full of Dulce de leche or popular Area in Colombia and other parts of South America. Like many Latin recipes, this dessert has different variations depending on the country and the family. This is my recipe for Alfajores who grew up eating in Colombia.

Some people like to roll these grated coconut biscuits, sprinkle them with icing sugar or both. I usually made them in both ways, half a lot with coconut and sugar and the other half with only icing sugar.

Ingredients to make this recipe

Flour: You need flour for all uses to prepare these biscuits. Make sure to measure well.

Corn starch: The mixture of flour and corn starch lies the biscuit in the mouth.
Area: Also known as Dulce de Leche or Cajeta for filling. You can buy it in any supermarket or online. Here is my recipe for homemade Dulce de leche if you want to do it from scratch.
Grated coconut: This ingredient is optional and you can use non -sugar or sweetened according to your tastes.

How to do alfajores
Preheated the oven at 350 ° F. In a large bowl mix the butter and icing sugar. Add the flour, corn starch and vanilla extract, then mix with well -combined hands. Knead together to form a soft dough. Cover with a plastic wrap and leave to rest for 10-15 minutes.

Transform the dough into a floured counter and knead for about 2 minutes. Spread at about ¼ inch and cut the biscuits with a round biscuit cutter.

Put them on a biscuit pan and cook for about 10-12 minutes. Remove from the oven and let it cool on a grid for 10 minutes. In a small dish, place the flakeed coconut and set aside.

Distribute Area or Dulce de leche on each biscuit, then put two biscuits together, making a sandwich with the space in the middle of the two biscuits. When you put the biscuits together, you will want that a little area will come out on the sides. Take the plate with the coconut and cover the edges of each alfajor biscuit with it, rolling the edge of the biscuit in the flakeed coconut if you use. Sprinkle them with icing sugar and have fun.
