This recipe is my Mil recipe, today my husband told me he makes a kind of recipe Thoran when he is small and that he had an incredible flavor. So I asked for the recipe from her and changed it to my taste. And the result was surprising. My husband loved him so much.

Versatile: This recipe by Thoran di Montone is so versatile that you can combine it with Rasam rice, Kerala Matta Rice, Idli, dosai, parotta or can be enjoyed alone. You can also prepare the Rasam Montone or the soup using the pressure muton broth.

Ingredients


Mutton / Lamb: Mutton / Lamb is the star of the dish and is the primary source of protein. Use small pieces of mutton and cook until it is tender. You can also try other meats such as chicken, beef and seafood.
Shallot: I used small shallots / onions for this recipe as they have a mild flavor and provide natural sweetness during roasting. You can also replace it with normal onions.
Space: For the dressing use coconut oil, curry leaves. The salt is used to balance the general taste.
Garlic : The garlic adds a rich aroma to the mound.
Coconut : The main ingredient to prepare Thoran is the fresh coconut. It provides the plot and adds thin sweetness. You can replace with frozen coconut or dried coconut.
Spice powder: To add color and heat to the Thoran I used turmeric powder and chilli dust. For a vibrant red color, you can also add a spoonful of Kashmir chilli dust.
Entire spices: To make the Masala coconut paste more aromatic, I added fennel seeds, cumin seeds, cinnamon stick, cardamom pods during grinding. This helps to reach a tasty and aromatic Thoran.


Hack
Coarse grounding: When grinding the coconut and other spices transform it into a large consistency not in dust or pasta. The coarse consistency of coconut gives Thoran only its authentic consistency.
Mutton cuisine: In a pressure cooker, add clean mound, turmeric powder, salt and water. Cook them for 8-10 minutes based on the tenderness of the meat.
Montone stock: After cooking the pressure, filter the liquid. This broth can be used for other dishes such as rasam or soup. Mutton Thoran should be dry, not watery. So make sure you completely filter the stock.
Extra spices: If you want to make your Thoran spicy, add the chopped green chili or crack while throwing the mound with coconut.

2. How to make it more humid or juicy?
Add a few tablespoons of mutton broth from the pressure cooker during the omelette. Do not add too much otherwise it will become soaked. Just add enough to make it wet.
3. Can I use lamb instead of mound?
Yes, you can do this Thoran using the lamb. Make sure to cook the lamb so tender and the lamb also has a thin flavor compared to the whipping. Then regulate the spices accordingly.
Variations
Gambero Toran: The Thoran of Gamberi recipe is so simple and can be easily prepared. Marinate the prawns with spices and grind the coconut. So put everything together in a pan and cook for 5-10 minutes until it is well roasted and dry. It can be appreciated with rice, dosai and idli.
