Which Vermicelli should I use?
This recipe uses beans vermicelli made with mung beans. Compared to rice vermicelli, the vermicelli of mung beans are more rubbery and lighter color.
You can cook these noodles directly in the boiling broth or even soften in a bowl of hot water before adding to your plate.

How to prepare the Vermicelli noodle soup
Step 1. Put the chicken broth, chopped garlic, napa cabbage, mushrooms and carrot in a large hood.
Step 2. Cook over low heat for 12-15 minutes or until carrots are tender.




Step 3. Add the Vermicelli noodles and cook for another 2 minutes or until they are soft.
Step4. Connect with tamari soy sauce and sesame oil.
Step 5. Top with shallot and toasted sesame (optional).




Tip
To make it easier to serve, cut the vermicelli cooked with scissors (if necessary).

YES! They are mainly made with mung beans, starch and water so that they are naturally gluten -free. They work as a large substitute for wheat noodles.

- 5 large Napa cabbage leaves chopped
- 5 Shiitake mushroom Removed and thin stems
