To start preparing the tomato recipe or recipe from curry Thakkali, prepare all the ingredients and keep them ready.
Dip the tamarind in hot water for 20 minutes. Extract the water from the tamarind to obtain about 1/2 cup of tamarind often.
Cut the tomatoes approximately and pulsate the chopped tomatoes in a grinder. You want a large sauce and not a refined puree. This will help add consistency to Otsu tomato.
Heat the oil in a pressure cooker over medium heat, add the mustard seeds and let it burst. Add the curry leaves, garlic and onions and brown until the onions become tender and translucent.
Now, add the crushed tomatoes, tamarind water, turmeric powder, sambar powder, salt and jaggery. Mix the tomato and cook for 2 whistles.
Turn off the heat and allow pressure to release in a natural way. Once the pressure releases, open the pot and removes the Otsu/ Thakkali tomato.
Check the salt and spices and regulate the taste accordingly. Transfer the curry of Gotsu/ Thakkal tomato to a serving bowl and serve hot.
