Portobellos rellenos / Por: María Paulina Chica de Mi Momento Ahora

This week we have a very special guest, IIN certified Health Coach, Maria Paulina Chica from My moment now. He accompanied us on several occasions, both on our networks and on this blog. We like her recipes, always healthy, practical and rich in vegetables, so much so that we never tire of inviting her to share her knowledge of healthy and easy cooking with you.

Maria Paulina shares a recipe for stuffed portobellos, a delicious and healthy option to accompany a protein or to make it your complete dish if you fill them up. You can also use them to receive guests at home, as an entrance or in transit.

As we told you, here we give you the basics for preparing your recipes, but you can always go further by using sprouts of different flavors and varieties; mesclum or our different baby leaf mixes; or all the vegetables and special foods we have for you, to eat better.

Portobello stuffed with My Moment Now

Ingredients:

  • Portobello
  • Spinach from Bogota
  • Gratin cheese
  • Olive oil
  • *Optional: animal protein to include in the filling, chopped chicken, minced meat.

Preparation:

  • Remove the stem and one leg is fleshed outof portobellos. Separate to use in the filling.
  • Once ready, spread olive oil both outside and inside with a brush.
  • Chop the stems and meatfry.
  • In a previously hot pan, spread a drizzle of olive oil.
  • Add the chopped portobello and fry it for a few minutes.
  • Add the spinach and fry for a few more minutes without reducing it too much. *Variations: Add some proteins of your choice.
  • Once the sauce is ready, put 1-2 tablespoons or depending on the size of the portobellos and a little cheese on top to gratinate.
  • Bake at 170°C for 15-20 minutes depending on the size of the portobellos, and may vary depending on the oven.
