It is crazy to think how long we have developed and published recipes on the wok of life: we arrive in 12 years.
When we started, I really didn’t have the first clue on how to make a simple omelette in this way. Today I always do them, cooking many of the same dishes for my family that my parents have prepared for me!
This pork with green beans is an excellent primer in the average workflow of a Chinese break:

It may seem like many steps, but they happen in a few minutes and make sure that each element of the dish is cooked perfectly when it affects the dish.
Some recipes require many tests, but after more than a decade of work on the wok of life with the rest of the family, some recipes are crushed. This was one of them!

What pork cut is better for the fryable?
The boned pork shoulder or the pork seat, both of which come from the pork shoulder, are the best for the fried. They are more marbled, juicy and cheap to start.
The pork shoulder (also known as “picnic shoulder”, often sold bone with the bright skin) comes from the lower part of the shoulder, while the pork seat (also known as “Boston Calz”) is the largest upper part of the shoulder.
Both are excellent choices for frying. We often buy a large piece, take it home and cut it in smaller pieces of 8-12 oncia to freeze for the steps like this.
Take a piece of pork from the freezer and transfer it to the refrigerator in the morning. Later that evening, it will be partially thawed and perhaps still a little freezing. It’s perfect! The firm and partially defrosted meat will be a blow to cut thinly and even Giulienne in stripes, as we did in this recipe.
If you want a cut with less fat, you can cut the pork loin or even the boned pork ribs for the central cut for the fried. This is the beauty of the velvet process, in which the meat is marinated with oil, corn starch, water and other condiments. Even the driest cuts in meat can cook tender.

Pork with instructions for green bean recipes
In an average bowl, add the pork strips with the ingredients of the marinade (water, corn starch, oil, oyster sauce and shaoxing wine).

In a small bowl, add the chicken broth, light soy sauce, dark soybean sauce, sesame oil, sugar and white pepper.

Put a wok over medium-high heat and add 1 tablespoon of oil. Add the green beans. Sear the green beans on all sides until they are slightly burned, about 5-6 minutes. Remove the beans from the wok.


Heat your wok over high heat until you start smoking. Distribute the remaining spoon of oil around the perimeter. Distribute the pork on the wok in a layer and burn for 1 minute on each side. Add the ginger and garlic and fry for 30 seconds.


Then add the standard mixture you have prepared previously and increase the heat to the maximum. Add the suspension of corn starch, making sure to pour it directly into the liquid standing and fry for another 15 seconds.


So add the green beans. Frillo over high heat for another 30 seconds.
