Guacamole is a classic Mexican food that adds flavor and color to a variety of dishes.

Cut the avocado in half, peel and remove the pit. Put in a bowl.

Squeeze the juice from a lime in the bowl and use a fork to gently crush the avocado. They should be a little big.

Add the onion, the tomato, the jalapensos and the coriander to the avocado mixture and mix to combine. Taste and season with salt and pepper and additional lime juice as desired.

Serve immediately.
To keep the leftovers, press the plastic casing directly on the surface of the guacamole to limit contact to the air. Keep in the fridge for a maximum of 2 days.
