Even children, who can sometimes be fussy on the seafood, clean their dishes when these fajitas are on the menu.
The best prawns for the Fajitas
When it comes to creating the Fajitas of perfect prawns, the dimensions are really important. I recommend using 21/25 jumbo shrimp For this recipe because they are substantial enough to resist a high heat without cooking too much. These bigger prawns also keep their own against the bold flavors of the marinade and provide that satisfactory bite that makes each fajita so delicious.
If you are using frozen prawns (which I do often), be sure to defrost them completely before marinating. The best way is to make them defrost during the night in the refrigerator, but if you have little time, you can perform them under cold water for several minutes. The correctly defrosted shrimp will absorb the marinade more effectively and will cook evenly, so make sure yours is defrosted.

- 1 teaspoon garlic (or garlic powder)
- 1 teaspoon onion powder
- ½ teaspoon Cayenne pepper

How long to marinate the prawns
Market is the key to the construction of flavor, but timing is everything. 30-60 minutes is the weak point for shrimp to absorb all the great flavors without starting to cook in the acid lime juice.
Less than 30 minutes? You will still have some flavor, but not a lot of penetration. More than an hour? The acid can begin to break down too much shrimp proteins, leading to a soft consistency.
If you are in a hurry, even 15 minutes will add a little flavor, but aim for that 30 -minute sign for the best results.
