Kinako Mochi is a Japanese -style treatment made with glutinous rice flour. It is rubbery, rebound and thinly sweet, served with kinako powder (soy beans) and honey. Combine it with a cup of green tea and have fun!

Kinako Mochi is super easy to make without any special technique. All you need is to mix the glutinous rice flour with the water, shape the dough in balls and boil them for only 2 minutes. It is such a fun activity for children too!

- Red bean paste
- Cut fruits – fresh or canned
- Your favorite ice cream
- Whipped cream without milk
- Crushed walnuts – Aciani, peanuts, pistachio
You can also change the honey to the maple syrup to make this vegan treatment.
Which flour should I use?
Glutinous rice flour It is the key to the sticky elastic plot in Mochi. Since they are made with sweet rice, they are also known as sweet rice flour or sweet rice powder rice.
For this specific Mochi recipe, search Type “wet (or water) ground” which gives a smoother consistency in the Mochi. This type of glutinous rice flour is super fine and silky because the cereals have been immersed before being ground.
Check the link on the list of ingredients below to see what I use in the United States, or you can also use Japanese shiratamako which is made with the same grinding process.
American brands such as Mochiko Blue Star or Bob’s Red Mill Sweet Rice Flour are braked dry and have a more coarse consistency. They are not ideal for this recipe and will create shelled and pasta Mochi balls.
White/ integral rice flour cannot be used as a replacement in this recipe because it will give a completely different consistency.

How to do Kinako Mochi
Step 1. Prepare the Mochi ball dough. Put the glutinous rice flour in a bowl and add ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ ⅓ Macching of water, mixing with your hand at the same time. Stop add water when the dough gets wet enough to form a ball.
Step 2. Form. Roll the dough into balls of 1 inch size and flatten the center.




Step 3. Boil. Cook the spheres of mochi in boiling water for about 2 minutes until they float on the surface. Transfer the Mochi to ice water to avoid cooking further.




Step 4. Serve. Divide the mochi into small cups. Top with kinako powder and honey.
Faq
Kinako Mochi is the best if consumed fresh. However, cooked mochi balls can be chilled for a maximum of 2 days. Cover them with cold water and store in an airtight container.
To soften again, microwaves the Mochi balls for 10-20 seconds or immerse yourself in hot water for a few minutes. Top with kinako and honey right before serving.

- ⅓ cup waterfall more or less
- 3 spoons Kinako soy powder
- 3 spoons Honey Bitty syrup for the vegan option
