At least you had something to look forward to once the recess or lunch bell rang! More often than not, one of the main entrees on that list would be tocino. And for good reason too; this cured pork combines sweet and savory in an absolutely divine way. Everyone loves tocino, even as you get older. And if you want to do something new with this favorite lunch dish, look no further than this tocino fried rice!

Tocino Fried Rice

Sweet, thin strips of juicy pork; no one can resist the charm of the good old fashioned Bacon! The Spanish word for “bacon”, tocino in this country refers to something a little different from the dish the Spanish are familiar with. In the European country, pork belly is not cured or smoked; instead, you fry the pork cubes and add them to other traditional recipes. This is in great contrast to tocino in the Philippine context, which is a meal in itself! Everyone loves the sugary but also very tasty taste of tocino. The marinade is usually made up of sugar, salt, and even pineapple juice for that touch of acidity. You can cook it over medium heat and melt the fat, or fry it in oil. Sometimes, others choose to simply boil it in water. However you cook tocino, the satisfying and delicious result is the same!

One of the most popular ways to enjoy tocino is, of course, to eat it for breakfast! We’ve all heard of –silog combined meal. Here, a timeless Filipino breakfast consists of the food of your choice, plus an egg (scrambled or sunny side up, whichever you prefer) and delicious garlic rice. Popular examples of this would be tapsilog and longsilog. But there is no doubt that tosilog also occupies a high position in the list of favorite breakfasts! The sweetness of the tocino goes perfectly with the umami rice and the creaminess of your egg. And you can’t forget the refreshing kick of one serving atchara can provide too! How can it not be, when it combines everything Filipinos love, tocino and rice, among others? If you’ve ever had yang chow fried rice, it’s almost like a Filipino breakfast version of that same recipe. Our sweet and savory tocino can turn any leftover rice into a culinary feast. And when you pair it with peas, carrots and eggs? There’s no stopping those waves of flavors that are sure to put the best twist on a classic breakfast!

For those who are traveling and can’t find the time to make tocino, don’t worry! Luckily, this recipe calls for a package of Funtastyk CDO Young Pork Tocino, instead of requiring you to make your own! With all the things you love about tocino, this is sure to make your tocino fried rice even more of a success.

Let’s go cook! Here’s how to prepare your tocino fried rice.

Heat 3 tablespoons of cooking oil in a pan. Over medium-low heat, fry both sides of your CDO Funtastyk Young Pork Tocino, until golden brown. It is not necessary to boil it; frying is enough. Once it has reached the ideal shade of brown you want, remove it from the pan and cut it into small pieces. Then set it aside to prepare the eggs. After beating the 3 eggs, fry them in the same pan, after heating it again and adding another 2 tablespoons of cooking oil. When you are done frying the eggs, place them on a clean plate and also cut them into smaller pieces.

You have the tocino and egg down. Now you need to prepare the rest of your tocino fried rice, including the rice itself! In the same pan, melt 3 tablespoons of butter, then add your tocino. Cook only the tocino in the pan for about 30 seconds, then add the leftover fried rice. We recommend around 5 cups for the most optimal family serving size. Stir and continue to cook the rice for about 3 minutes, then season with soy sauce, salt and ground black pepper. These will give your recipe even more flavor and seasoning, especially the umami the flavor of your soy sauce.

Did you mix all the ingredients well? Now it’s time to add carrots and peas. Continue cooking for about 2 minutes, before adding the egg slices back to the pan. The last 30 seconds are dedicated to mixing your tocino fried rice together, making sure it’s as incorporated as possible!

Tocino Fried Rice Recipe

Easy fried rice with tocino, eggs and vegetables

Preparation: 10 minutes

Cooked: 20 minutes

Instructions

  • Heat 3 tablespoons of cooking oil in a pan. Adjust the stove between a low to medium heat setting. Fry both sides of our Funtastyk CDO Young Pork Tocino until golden brown (note: no boiling required). Remove the tocino from the pan. Cut it into pieces. Set aside.

  • Break the eggs and beat them. Heat the same pan and add the remaining 2 tablespoons cooking oil. Fry the beaten egg until done. Place it on a clean plate and cut it into small pieces. Set aside.

  • Melt the butter in the same pan. Add the tocino. Cook for 30 seconds.

  • Add the leftover rice. Mix and continue cooking for 3 minutes.

  • Season with soy sauce, salt and ground black pepper. Mix until all the ingredients are well combined.

  • Add carrots and peas. Continue cooking for 2 minutes.

  • Return the eggs to the pan. Stir and cook for 30 seconds.

  • Transfer the tocino fried rice to a serving plate. Serve. Share and enjoy!
