Using a couscoussier

A couscoussier It is essentially two vases stacked with a steamer on top. This tool can be found throughout Medinas in Morocco and is specifically designed to make this authentic Moroccan couscous recipe that we serve every Friday.

While it is a wonderful tool designated for steam and instill couscous at the top level with broth, meat and vegetables at the bottom level, it is not at all essential to create a perfectly soft couscous. It requires more cooking and a special hand fluff that is more complex than the method we are using today.

If you have a couscoussier and you hope to use it, it is important to use a more fine couscous that is not pre-course. My father loved This Moroccan brand.
