To start preparing the fennel turmeric nut soup with apple and raw mango recipe, toast to walnuts slightly on a heat flat pan For about 30 seconds at 1 minute, take care not to burn them.
Book some nuts for the outline. Clean the leeks and cut the white and a little of the tender green stems in the round.
Clean the fennel, the nucleus and cut the bulb. Book some branches to garnish.
Core and cut the apple. Usually I don’t peel the apple, but if you wish.
Peel and dice a slice of raw mango. The mango was harsh and I only used a slice so as not to let it overwhelm the dish.
Chop the thyme leaves.
Heat Deep cream or soup pot and add the oil. I used sunflower oil for flavor, but obviously you could use any other oil without a strong aroma.
Add the chopped leeks and the thyme and brown for about 3-4 minutes, until the leeks are soft.
Once the leeks have softened, add the fennel, mango and apple and mix. Add the walnuts and mix. Season with salt and pepper.
Add the turmeric and mix well for 2-3 minutes, until the raw smell disappears.
Go up 3-4 minutes until everything begins to soften. Add the broth, mix well to combine.
Bring the soup to the boil and then let it simmer at low for about 15 minutes, stirring occasionally. Turn off the stove and let the soup cool.
Once the soup has cooled the puree or mix the soup with a smooth cream liquid. Remember not as a puree when the liquid is hot and of pure in very small lots.
I had a bitter experience in the puree soup just to make it run away from the blender on me and the kitchen.
And this soup has turmeric which has strong dye properties – therefore!
Pour the puree liquid back to the pot, bring to a boil and then cook over low heat.
Check the dressing, add more salt or pepper if necessary, then cook over low heat for 5 minutes.
Serve the soup of hot fennel turmeric walnuts with a side dish of toasted slices, some chopped fennel fronds and a thread of honey or maple syrup.
I garnished with purple basil flowers and edible flowers add another dimension of the soup flavor.
Serve the turmeric walnut soup even with apple and raw mango together with carrot ribbon salad with Asian sesame sauce or smoked tofu and grilled vegetable salad and browse bread of full rosemary for a perfect, light and healthy dinner for the weekend.
