This beef stew is comforting, hearty, and full of flavor. It’s very easy to make and the leftovers are delicious.

What is Post or Boy Sweat?
It is a beef stew prepared with roast beef, vegetables and spices. This dish is very popular in Colombian homes. It’s very easy to make and absolutely delicious served with white rice, along with avocado and a simple salad on the side.
This Sudado de Posta was one of my favorite dishes growing up in Colombia. Both my mom and Mamita made different types of sweats at least once a week. In some parts of Colombia, this recipe is made with a cut of meat known as posta, while in other areas of the country a cut called muchacho is used. Here in the United States I buy a round-eye sirloin steak to make this dish.

The meat should be tender and since this particular cut is tough, it requires extended cooking. The slow heat helps break down the muscle of the meat and tenderize it. I would suggest cutting it into thick slices, as I did, and cooking it over medium-low heat until the meat is tender. Also, to give the meat time to stew, I cooked the meat on its own first and then added the vegetables towards the end of cooking.

Ingredients you will need

Meat: For this recipe I recommend using round beef.
Liquid: good quality beef broth and water.
Condiments: A mixture made from onions, garlic, cumin, etc. see the recipe here
Vegetables: Tomato, potatoes and yuca
Spices: cumin powder, sazon with color, salt and pepper.
Herbs: Coriander or parsley

My grandmother and my mother always used a pressure cooker to prepare this stew and the cooking time is less than a normal pot. Personally, the pressure cooker scares me, so I prefer to prepare it in a regular pot or in the slow cooker. If you love stews and comfort food, this Sudado de Posta recipe will be for you.

Sudado de Posta (beef stew recipe)
Ingredients
- 1 3 to 4 pound beef eye round, cut into thick slices
- 2 cups beef broth
- 3 cups of water
- 1 cup of sauce condiments see the recipe here
- 2 cups chopped tomato
- 1 teaspoon cumin powder
- ½ teaspoon of flavor with color see my recipe here
- Salt and pepper to taste
- 8 whole small or 4 large potatoes peeled
- ½ pound frozen or fresh yuca manioc
- Fresh coriander
Instructions

Place the beef, broth, water, aliños sauce, tomatoes, sazón and cumin powder in a large pot. Bring to the boil, then reduce the heat to medium-low and cook for about 1 hour and 30 minutes, stirring occasionally. Salt and pepper to taste and add more water if necessary.

Add the potatoes and yuca and continue to cook for another 30-45 minutes, until the vegetables and meat are tender. Sprinkle with fresh cilantro and serve over white rice.
