This meal is so versatile depending on what cut of steak you prefer, if you add extra veggies, or have a garden full of fresh herbs to add. Make it yours and change it every time you prepare it for a completely different moment. different aluminum foil dinner every time!
Notes on ingredients


- Steak: You can really use any type of steak you like or what is on sale. Some of our favorites are the sirloin, ribeye, filet and tri-tip.
- Potatoes: We use red because you don’t need to peel it. Be sure to cut the potatoes small enough and blanch them before adding them to the packets to ensure that both the beef and potatoes finish cooking at the same time.
- Jalapeno: Jalapeños add a delicious heat to this dinner, but you can always remove the ribs and seeds from the jalapeños to reduce the heat.
- Butter sauce: These ingredients are the perfect combination to complement and enhance the beef and potatoes. Feel free to use fresh garlic if you prefer.
- Rosemary: Beef, potatoes and rosemary are a happy trio.
Make your potatoes cheesy
There’s nothing better than cheesy potatoes. Use your favorite grated cheese and add it to your confections immediately after finishing cooking. The packets will be piping hot and hot, so be careful adding the cheese.
Add more vegetables
Some of our favorite veggie additions are sliced mushrooms, pepper strips, and onion rings. You can really add any of your favorite veggies to your foil pouch dinner. If you add other potato-like root vegetables, such as carrots, parsnips, or turnips, be sure to blanch them before adding them to the package.


Cooking beef
There is a wide range of doneness levels, depending on how you prefer to cook your meat. Rare cooking starts at 125 degrees Fahrenheit, up to 160 degrees for well done. Most of us like meat somewhere between these two extremes. If you prefer the meat well done, cook an additional 5-7 minutes.
Campfire instructions
If you plan to cook your parcels over a campfire, be sure to cut the potatoes small. The ideal time to cook your packages is over hot coals for more uniform temperatures. If you place it directly on the coals, add an extra layer of foil. Check your packages after 15 minutes. Continue cooking until the potatoes are tender and the meat has reached the desired doneness.
Make instructions in advance
You can cut the steak into cubes, make the butter sauce and blanch the potatoes up to 24 hours in advance. Just make sure the potatoes are fresh before assembling the foil packets. Store in the refrigerator until ready to cook. If you plan to camp and cook over a campfire, simply pack the packs before you leave and carry them in a cooler with ice.
Storage and heating
Refrigerate remove leftovers from the foil packaging and store them in an airtight container for up to 5-6 days.
Heat in a pan with a little butter or olive oil over medium-low heat. Use about 1 tablespoon of butter or olive oil per package.
This dish is not ideal for freezing as the texture of the potatoes may change.
